Potato, Ham And Cheese Frittata

Ingredients: (Conversion Chart)
• 1 tablespoon extra-virgin olive oil
• 1½ cups ½-inch-cubed potato
• 1 onion, halved and cut into thin strips
• 8 eggs
• ¼ cup heavy cream
• ¼ teaspoon salt
• ¼ teaspoon freshly ground pepper
• ¼ cup grated cheddar cheese
• ¼ cup grated Parmesan cheese
• 6 slices ham, cut into small pieces
• 1 tablespoon chopped fresh chives

Directions:
1. Preheat broiler.

2. In a large nonstick skillet, heat oil over medium-high heat. Add potato
and onion and sauté until potato is almost tender, about 10 to 12 minutes.

3. In a medium bowl, whisk together the eggs, cream, salt, and pepper.
Stir in the cheddar cheese, Parmesan cheese, and ham. Pour into
skillet, reduce heat to medium and cook, without stirring, until
set around the edge but still runny in the center, about 5 minutes.

4. Place skillet under broiler, and broil until golden brown and just set,
about 2 minutes. Sprinkle with chives. Loosen edge with a rubber spatula,
slide onto a serving plate, and cut into wedges.
